Canning our beans~

We are in Canning seasons right now.

Tomorrow ( 8-28-08 Wednesday)

 is tomatoes and I plan to make my

Spaghetti sauce! YUMM-O!!

Casseroles


chicken and rice casserole
This was one of my  speciality!! It was from an  old 
Mennonite Church cookbook...it was originally called "chicken
Bavarian", but we just started calling it chicken and rice
casserole. It is great to take to a shut-ins, new young parents,
etc. because you can prepare it ahead of time...all but baking
it...all they have to do is pop it in the oven for 2 hours and it is
done!! The meat falls off the bones it is so tender!!
ENJOY!!

Cut-up chicken pieces
3/4 cup uncooked rice
1 can cream of mushroom soup
1 can cream of celery soup
1 cup water
2-3 TBSP dried parsley
dash of curry powder
1 pkg. Lipton Onion soup mix
     Mix the rice with the mushroom soup and the celery soup. Add
the water, parsley and dash of curry powder. Pour into a well
buttered 15"x9" casserole dish; lay chicken pieces on top of rice
mixture. Sprinkle with Onion soup mix.  Cover with foil and bake at
350 for 2 hours. DO NOT PEEK!!
YIELD: 5-6 servings--for 8 or more servings, double the recipe.

Desserts/ pies, cookies, sheet cakes, etc...

Blackberry Cake
 
2 cups sugar
1 cup butter
4 eggs
4 3/4 cups flour
1 tsp. soda
1 t. baking powder
1/2 salt
1 cup buttermilk
1 tsp. vanilla
2 cups fresh or frozen blackberries
 
Cream together sugar and butter.
Add eggs one at a time. Beat well.
Stir together flour, soda, baking powder, and salt.
Combine vanilla and buttermilk with cream mixture.
Beat well. Fold in blackberries.
Bake in 10" tube pan at 350 for 1 hour and 15 minutes.
Combine 1 1/2 cup powdered sugar with 1 tsp. milk and drizzle over cake when cool.

Soups and beans and dips...

AMISH STYLE BAKED BEANS


1 can kidney beans
1 can butter beans
1 can pork & beans
4 slices bacon
2 sm. onions, chopped
1 c. brown sugar
1 c. catsup
1 tsp. prepared mustard


Drain kidney and butter beans. Mix beans together.

Fry bacon, but don't brown it.

Put beans, bacon and onions in casserole.

Add sugar, catsup and mustard.

Mix well and bake at 350 degrees for 1 hour.



 
Ham and Beans
 This is a must make with leftover ham and everyone agrees it's absolutely delicious.
This recipe has been scaled to make: 10 servings

Ingredients:
1-1/2 pounds dry Great Northern beans
11 ounces cooked ham, diced
1-3/8 small onion, diced
2/3 cup and 2 teaspoons brown sugar
salt and pepper to taste
1/4 teaspoon cayenne pepper
1 tablespoon and 1-1/4 teaspoons dried parsley



Directions:
1. Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
2. Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and  water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

BANANA & VANILLA YOGURT

Ingredients

2 cups skimmed milk
1 cup fat free yogurt (any flavor you like)
1 banana
1 large egg, whole
2 scoops vanilla whey protein powder

Recipe Information for the Homemade Shake

A very easy protein shake you can whip up in a flash so it's great in the morning. You are going to get quite a large shake out of this so it is perfect for drinking half and then taking the rest with you to work, college, or just to the refrigerator for later in the day.

This shake has a huge amount of protein in it coming from the 2 cups of milk, 1 cup of yogurt, 1 egg and 2 scoops of whey powder! A lot of the ingredients are liquid so it's also easy to drink.

Many people swear by removing the yolk from the egg when making a protein shake. I'm not quite in agreement because the yolk actually contains a significant percentage of the whole egg's protein content. Sure, if you want to load the shake with raw eggs you might just use one yolk and just the whites from the others. Egg yolks are relatively high in saturated fat and cholesterol but you need a balanced diet at the end of the day so it's up to you.

 

 

BANANA PINA COLADA with WHEY

Recipe Ingredients

1 cup skimmed milk
½ cup chopped fresh (or canned) pineapple
½ cup coconut 'cream' or 'milk' (the canned stuff you would add to a curry)
1 banana
optional rum flavoring NOTE: I said ‘flavoring’ ;-D
1 scoop vanilla protein powder
ice cubes

About this Shake

Canned coconut can come in either a 'cream' or a 'milk' form. Obviously the cream version is going to be more concentrated as far as coconut content goes so it is advisable to use this if you are on a mass-gaining program. If you are only after a protein shake then use the milk variety. The cream version is also going to make a thicker shake for you as well.

The good thing about canned coconut milk / cream is that it is low in cholesterol however, one thing to watch out for is that it can be rather high in saturated fats.

Shake Ingredients:

1 cup skimmed milk
1 banana
12 - 16 almonds (or the equivalent in shredded almonds)
honey to taste
sprinkle of cinnamon (optional)
2 scoops vanilla protein
3-5 ice cubes

More About This Shake Recipe

Trust me the honey and banana combination is a tasty dream. Personally I grew up on honey as substitute for sugar so I could be a little biased. A little tip for you; try shredded almonds (you can get them in packets from the supermarket). They have had the brown 'skin' removed which makes for a smoother protein shake that is less 'gritty'.

AZ: "I love almonds and I'm sure many of you do so go on, through a handful in to your shake and enjoy the nut that provides the best protein content around (app arrantly). Make sure you blend them well though as no matter how big you get, you'll still look stupid when you have half an almond stuck in your throat~

 

Tropical smoothie

Total servings: 5


Ingredients

500    ml pineapple juice,unsweetened, canned or fresh
250 g fresh strawberries
1 ripe mango, cut in slices
1 ripe banana, sliced
250 ml soy milk
 
Recipe directions

Add the strawberries, banana and mango to the pineapple juice. If you have them you can add other tropical fruits too (such as guava, papaya, pitaya,..). Puree until smooth. Add the soymilk and puree again until smooth.

Serve the tropical smoothie with some ice and in glasses garnished with a mint leave.

It is amazing what you can do with a fridge full of fresh fruit and a blender. The difference between blender recipes and juicing is the added advantage of soft fibers.

This is wonderful for cleaning and maintaining a healthy colon. Blender recipes are an excellent addition to a healing and cleansing program.

 

Apricot Pineapple Smoothie Recipe

1/4 cup crushed pineapple
1 fresh apricot, diced
6 strawberries
1/2 banana
1 1/2 cup water
1 tbsp. skim milk powder
1 heaping tbsp. high- quality protein powder (optional)
1 tsp. flax seed oil (optional)

In a blender, process fruit with the rest of the ingredients. Blend until thoroughly mixed and serve.

 

Banana-Strawberry Fruit Smoothie Recipe

1 banana, frozen
6 strawberries, frozen
1 1/4 cup water
1 tbsp. skim milk powder
1 heaping tbsp. high- quality protein powder (optional)
1 tsp. flax oil (optional)

In a blender, process all the ingredients until thoroughly mixed and serve.

 

Tropical Fruit Shake

1/2 mango
2 tbsp. frozen pina coloda mix (or 1/8 tsp. natural coconut extract)
1/2 banana, frozen
4 strawberries, frozen
6 ice cubes
1 1/4 cup water
1 heaping tbsp. high- quality protein powder (optional)
1 tsp. flax oil (optional)
--------------------------------
In a blender, process all the ingredients until thoroughly mixed and serve.

 

Banana-Berry Fruit Smoothie

1/2 pear, cored
1/4 cup frozen blueberries or frozen mixed berries
1/2 banana, frozen
1 1/4 cup water
1/8 tsp. cinnamon
1 tbsp. skim milk powder
1 heaping tbsp. high-quality protein powder (optional)
1 tsp. flax oil (optional)
--------------------------------
In a blender, process all the ingredients until thoroughly mixed and serve.

 

Banana-Orange-Strawberry Fruit Shake

1/2 cup orange juice
1/2 banana, frozen
6 strawberries, frozen
1/2 cup water
1 tbsp. skim milk powder
1 heaping tbsp. high- quality protein powder (optional)
1 tsp. flax oil (optional)

In a blender, process all the ingredients until thoroughly mixed and serve.
